The good people at Butterball have operated a Turkey Hotline since 1981, so they’ve heard them all. The most common mistakes are the simplest to cure:
1. Forgetting to thaw the turkey. On “Thaw Thursday” one week prior, put the turkey in the refrigerator and it will be ready.
2. Basting the turkey. Opening the oven door causes more trouble in escaping heat and uneven cooking than the basting lends the bird.
3. Not using a real meat thermometer. The pop-up thermometer and the wiggling of the leg are not going to give you the proper temperature read required for a safe meal.
